Dag 1: Dinner: Roasted veggies with salad and hummus

So today was the first time I actually tried hummus. I bought one with chili flavor and the verdict? L-O-V-E-D IT! It was surprisingly good - now I finally understand what the fuzz is all about, lol. My boyfriend had steak, but I can honestly say that I didn't envy him.


Dinner today was oven roasted vegetables (carrots, sweet potatoes, parsnips and beetroot) with some olive oil, seasalt and pepper. The salad constisted of kale, tomatoes, bell pepper and cucumber, plus loads of chili hummus. Yummy! 

For dessert I had a small apple. I feel hungry but still full, it's weird... I'm definitely not hungry enough to eat anything, but I still don't feel full. I guess I should be eating a bit bigger portions - you definitely need to eat more when being on a vegan diet.

Day 1: Breakfast: Peanut butter & banana puffed rice cakes

I started the day with a glass of lemon water, before I went to the local grocery store to buy some rice cakes and banans. We are driving to the supermarket later today, so I just got something simple to make for breakfast. Also, it's an easy first vegan meal because it's something I know I like.


So yes, my breakfast consisted of two puffed rice cakes with peanut butter and one slized banana + a glass of water. It tasted really good and filled me up pretty well. Usually I can eat up to 4 slizes of peanut butter toast before I feel full, but this did the trick. 

So far so good!

Oh and by the way, I bought a bunch of almonds that are now chilling in a in a water bath - I'm going to make my own almond milk!

Vegan food pyramid

I have been looking for a vegan food pyramid to follow for my vegan week challenge, but they all look different. I decided to pick the one I feel is the healthiest and the one that I personally want to follow. So here it is:



The reason I chose this is because it focuses the most on greens such as spinach and kale, and after that vegetables (and fruit). It doesn't contain the "vegan bread and pasta" part, which I think is great because I try to stay away from gluten as much as possible. So yeah, I will try my best to follow this - not for every meal but for my everyday intake of food.

I'm trying the 7 day vegan challenge!

Why? Because why not! I want to change my diet, become healthier and eat more greens. I want to avoid as much dairy as possible (even though I'm crazy about icecream), and eat much less red meat. Those are my main goals, but we will see where this challenge will take me.

I'm also very much against how cattle is being held here in Denmark, so skipping all animal products will help, even though just a tiny bit. I have always been against excluding meat and such from my diet because a lot of vegetarians and vegans don't get enough vitamins, mostly vitamin B12, but on the other hand, a lot of the meat eaters often lack other kinds of vitamins, so how bad can it really be (for a healthy adult person)? I love meat but I'm willing to give it up, at least for this week of going vegan.

Tomorrow it's time for vegan grocery shopping and my first vegan meals! Wish me luck! :)
